Start your week off right with these EASY banana bread muffins! 😋🍌 You can mix these banana muffins (or bread) up quickly by hand, no mixer required🙌🏻. This has become our go to banana bread recipe - who wants to try it!? Wet Ingredients * 2 large, ripe bananas * 1/2 cup softened butter or coconut oil * 1/2 cup coconut sugar * 2 eggs * 1/2 cup cream or coconut cream
* 1 tsp pure vanilla extract Dry Ingredients * 2 cups whole meal flour * 1 cup rolled oats * 1 1/2 tsp baking powder * 1 tsp baking soda * 2 tsp ground cinnamon INSTRUCTIONS 1. Preheat the oven to 180°C. Line Or grease muffin tray. Set aside. 2. Peel bananas and add to a large mixing bowl. Using a sturdy whisk, fork, mash bananas until smooth. Add the oil, sugar, eggs, cream and vanilla. Mix well. 3. Add flour, oats, baking powder, baking soda and cinnamon. Mix together until well combined. 4. Pour batter evenly into prepared backing tray. Optionally, sprinkle with oats (or choc chips). 5. Bake for 20-30 minutes. Test if it’s ready by sticking a skewer into the center of the muffin. The skewer will come out clean when the muffins are done. Makes 12-14 muffins. Enjoy!
